Spring has sprung! Yay!

I hope you’ve had a fab week, and thanks again for your gorgeous emails re last weeks dish…great to hear the boys loved the quinoa salad too!

Next week’s Love Lunch will be my low fat vegetarian Nasi Campur – For those of you who haven’t been to Indonesia; it’s a traditional meal, a selection of dishes served on a bed of steamed rice…

I will cook my three favourites for you and serve it on nasi kunyit — steamed turmeric rice (I’ll cook basmati which is lower GI than brown rice).

My super low fat Balinese style organic mixed seasonal vegetable curry - of mixed organic veggies, fresh ginger, kaffir lime leaves from our garden, organic chilli, coriander roots and seeds, a dash of organic coconut milk and organic rice milk, slow cooked to a rich creamy consistency so you wont know its not full fat coconut cream I promise!!

Bean sprouts and organic shallots - wok tossed with a splash of sesame oil, tamari and white pepper and my Fat free fragrant spicy crumbled tofu (non GMO) sprinkled with fresh organic coriander and lime juice and a dollop of sambal olek. ENAK!! (yum).

Cost: Tuesday’s deliveries: $12.10 each incl GST (that’s still just $11 to me plus GST).

Add a $13 Suppertime delivery charge for East and CBD drop offs.

You can also pick up from the kitchen between 4.30pm and 5.30pm on Mondays or 10am on Tuesday morning, just let me know when you place your order and I’ll give you the addie.

Next week’s Love Lunch is a dish I’ve been seriously craving lately, so thought I’d whip it up for you all too! (Pumpkins and butternuts are insanely delish at the moment, sweet and juicy, perfect for roasting with rosemary from my garden mmmmm)

I hope you’re getting amongst this sunshine! Heaven isn’t it?!

I’m so glad you enjoyed my low fat lasagna, and yes the vegan béchamel is definitely dairy, gluten and fat free!! (No Bec, it’s not too good to be true).

Next weeks Love Lunch is one of the most requested Love Lunch dishes, and one of my favourites….its been a while since I’ve made it for you all, so how can I refuse?

My regulars know I picked this recipe whilst in India and have adapted it, as always, to a dairy free, gluten free, fat free version, with all the traditional spices and flavour but no guilt!

So, next week’s Love Lunch will be My low fat spinach and chickpea rogan josh curry -of my home made Rogan Josh curry paste, organic tomatoes, spinach, chickpeas, kaffir lime leaves from our garden, fresh lime and coriander and always my main ingredient: lots of LOVE!

Served on a bed of steamed basmati rice (lower GI than brown rice) accompanied with a dollop of my fat free dhal and a wedge of lime to squeeze over just before devouring…mmmm… high protein, 98% fat free, organic goodness!

Fab served with sweet mango chutney, lime pickle a papadam and a smile… (For fat free papadam option, just pop them in the microwave on high for 1 minute).

This dish is perfect for freezing….

Now…drum role….next week’s dish!!! Back by popular demand, (and inspired from my recent trip to Italy) next week’s Love Lunch will be my organic vegetarian lasagna — of seasonal organic mixed veggies finely sliced and layered with char grilled zucchini and eggplant, my fat free organic spicy tomato sauce, organic pasta sheets, my organic béchamel sauce, mozzarella, parmesan and fresh herbs from our garden and as always, my main ingredient… lots of LOVE! Baked till golden brown…mmmmm…

I will also make a low carb gluten free dairy free option, with my vegan béchamel sauce and only one layer of pasta, perfect for us with wheat/dairy intolerances and those of us watching our weight! All the taste but no guilt!

This dish is great eaten either hot or cold and perfect accompanied with an Italian salad and a smile…

Cost: Tuesday’s deliveries $13.20 incl GST

I can also make trays for you, perfect to pop in the freezer and whip out for an easy and healthy meal at any time! I will par cook these, so you just have to pre heat the oven on high and cook for 15 mins… 4 pieces to a tray $52.80 incl GST. And for my new customers, my servings are very generous!
