Love Lunch 21 September – placa mixta Mexicana – my organic low fat Mexican mixed plate

Hey my lovelies,

I have been craving all things Mexican as of late…lazy days, Latin tunes, comida Buena (good grub) clear waters and hanging languorously in hammocks sipping cervezas. …. Ahhh….

But alas, I’m in Sydney for the foreseeable future, as are most of you lovelies, so I figured if we can’t go to Mexico right now, I’d do the next best thing and bring a little bit of Mexico to us!

So amigos, next weeks Love Lunch will be my placa mixta Mexicana – my organic low fat Mexican mixed plate – Which is a mixture of all my favourite Mexican delights served on a bed of steamed basmati rice (lower GI than brown rice) and of course always my main ingredient: lots of LOVE!

Toppings are: my home made organic frijoles refritas, (my refried beans, lard free of course) my pico de gallo salsa of diced organic tomato, cilantro, red onions and fresh jalapenos, some fresh organic salad leaves, BBQ onion and capsicums with oregano, a dash of my salsa verde, and some low fat sour cream (optional).

This dish is perfect accompanied with some organic corn chips (Freedom Foods make a super low fat, preservative free, baked version) or if you’re not watching your weight like a hawk, I’d recommend the organic blue corn chips…mmmm…delicioso!

This dish is gluten free and dairy free (without the sour cream dollop of course) it freezes well if you remove the greens prior, and keeps well in the fridge for up to 4-5 days.

Cost: $12.10 each incl GST (that’s still just $11 to me plus GST). Plus the $13 eco friendly delivery charge for East and CBD drop offs. (Suppertime now has a Smart car fleet!).

Or you can pick up from the kitchen between 4.30pm and 5.30pm on Monday the 20th or 10am on Tuesday morning, just let me know when you place your order and I’ll give you the addie.

Almond Protein Ball (wheat and gluten free) Cashew & Pecan Ball (wheat and dairy free) AND NEW FLAVOUR Peanut Premium Protein Ball (wheat and dairy free). Each ball is $3.29.

Found Organice Juice – organic carbon neutral 100% pure juice, no concentrates, no additives and no preservatives in flavours: pomegranate, strawberry and mulberry $3.45 for 250ml.

Organic Add Water – $2.50 for 500 mil.
