Hola my Lovelies!

As my girlfriend is heading off to Mexico today (soooooo jealous!) I figured I’d create a little bit of Mexico for us all to enjoy here at home…

I want to share a recipe I picked up whilst traveling there; I had this dish at an amazing little restaurant in Tulum…my favourite place on earth!

As always, I have adapted it into a gluten free, fat free, meat free version…all the authentic taste, but no guilt!

Next week’s Love Lunch will be my fat free chilli con veggies- a delicious spicy Mexican stew-of red kidney beans, organic veggies, my special home made Mexican spice mix (I schlepped back a parcel of herbs and spices heavier than me on my last trip to the west coast) and of course, always my main ingredient, lots of LOVE!

I stew it on low heat for several hours, reducing it into a rich and full flavoured authentic Mexican chilli…

No oil, butter, and obviously no lard…its completely fat free!!! (And vegan) Served on a bed of steamed organic brown rice, sprinkled with fresh cilantro…

Great accompanied by some salsa verde, jalapenos and guacamole and for those of you who eat dairy, dollop on some sour cream…Ay carumba!

But one more thing! (no its not a free knife set) as Tuesday is Melbourne Cup, I figured I’d bring Love Lunch back a day, cooking for you all on Sunday rather than Monday, (that’s how much I love you all!!!) and therefore delivering on Monday, so you can get amongst it on Tuesday! (Besides you’ll need some love in your bellies before all the drinking ensues)

Cost:  Monday’s deliveries $11 each (minimum order of 5 per drop off)
